Description: Although sausage has a long history, it was only with the shift to cities, and the necessity of producing food in larger quantities, that this utensil came into wide use. Meat was a ground and mixed with salt and spices not only to enhance the flavor, but to preserve the meat. Pressing meat into casings could be time consuming and messy if done by hand or with the aid of simple funnel.
Label Text: SKINNER CATALOGUE: An old hand sausage gun, consisting of a hollow tin cylinder with a 3/4 inch diameter end spout, and a turned maple plunger. Used for filling sausages. Length 11 5/8 in. Diam. 3 in. Cat. 5/4/1935 7/19/10- cleaned by Betsy Johnson in preperation for fall exhibition "Pantry Puzzlers from the Skinner Museum" at MHCAM Newspaper stuffed in object to hold plunger up. Herald Tribune, March 3, 1935
